Essaouira, also known by the old denomination of Mogadur, Mogador in Portuguese, is a Moroccan port city, located on the western Atlantic coast, north of Cape Sim. It is the capital of the homonymous province, in the region of Marrakech-Tensift-Al Hauz. With about 70,000 inhabitants, its medina or historical center is listed by UNESCO as a World Heritage Site since 2001. The economy of the place revolves around fishing, the wood, textile and food industry, and the trade in handicraft products , marquetry and jewelry in particular. al-Magrib; en bereber: Tamazgha; ¨lugar donde se pone el sol¨), hecho a basede sémola de trigo.
El nombre árabe —كسكس kuskus, كوسكوس kūskūs, كسكوس kuskūs o كسكوسو kuskūsū, se le podría considerar como el plato principal en muchos de
los pueblos del norte de África, y en algunas familias lo cocinan diariamente.
El cous cous es un alimento que consiste en granos
de sémola de trigo duro de tamaño medio de un milímetro de diámetro (cocinado).
En Marruecos se hace se hace con cordero, pollo y verduras, todo acompañado del indispensable harissa (puré de pimientos rojos picantes secos). El cous cous es el alimento principal del viernes y de las celebraciones que señalan el final del Ramadán. Las mujeres lo preparaban por lo general, durante las reuniones de familia para matrimonios, nacimientos y fiestas.
